Here I am, finally joining in on the PUMPKIN ALL THE THINGS craze. Not that I haven’t made pumpkin the base of my food pyramid already—glance around my Facebook page or Instagram and you’ll see that pumpkin has become a huge part of my life. I might even say we’re going steady.

I’ve been having Bulletproof(R) Pumpkin Spice Lattes every. single. day. There’s nothing wrong with that. It’s actually the most fun and delicious part of my day. It’s a shame I have to rush through it 64% of my mornings to get to work on time. To make sure I have somewhat adequate time for my morning coffee ritual, it’s nice to have breakfasts pre-prepared.

That’s where chia puddings come in.

As you can see from the timestamps on my posts, it’s been quite a while since I’ve updated.

Among my list of excuses are (1) new job that forced me to adopt a new (“normal”) sleeping schedule, (2) focusing on strengthening and fostering current and new friendships, (3) a lack of success in the kitchen.

But enough with the excuses. The main reason there haven’t been many posts is that I’ve been wondering what to do with this site.

Confession:  I had never really had pesto before making this Macadamia Basil Pesto. But, I think I get away with it because it’s absolutely delicious and I put it on everything now. Macadamias are one of my favorite nuts, so it only made sense to use them to make a pesto (since I’m too cheap to buy pine nuts at the moment).
