Since I first tried plantains, I’ve professed how much I love them. I’ve made plantain patties, plantain muffins, plantain cake, plantain beef bowls, and more. These starchy veggies are so incredibly versatile…it’s hard not to love them.

I’ve made plantain tortillas numerous times over the past few years, and I finally took the time to write down my favorite ways to make them. Both of these methods do take a little prep time, but tacos with these tortillas are so freaking good…you won’t regret it!

Originally, I wanted to perfect this recipe for Christmas, but I decided to hold off. Why? Well, it makes a bit more sense for Valentine’s Day… after all, maca is purportedly an herbal libido booster. Chocolate + frisky feelings. I can’t think of many other things I’d want for V-Day.

Homemade red enchilada sauce is easier than you might think!

My experience with canned enchilada sauce is limited, but I’m going to go out on a limb and say this homemade red enchilada sauce trumps anything you’ll find in a can.

You can whip up this recipe in about 10 minutes. The end result is a thick, complex, spicy sauce that you can use for your favorite enchilada recipe. Oh, and did I mention that it’s gluten free and paleo?

Easy Dutch Oven Shredded Chicken

Plain dutch oven shredded chicken is a staple in my kitchen for quick, easy meal prep. It’s faster than a slow cooker and makes moist, tender shredded chicken breasts every time!

I like prepping shredded chicken for fast, versatile protein throughout the week. I add it to salads, frittatas, egg bakes, casseroles and more. In a pinch, I’ll even sprinkle some salt and pepper on shredded chicken and eat it plain.
