Bacon-wrapped asparagus is one of those foods that is so incredibly simple it’s almost a scandal to call it a recipe. But here it is.
I’m really starting to re-discover and re-love super simple recipes. Simple food is so, so good! And what might be simple to me might not be to everyone, so I’ve been working on compiling the simple things I make and sharing them with all of you, in the hopes that it makes your mealtimes simple but flavorful and awesome.
First up is these bacon-wrapped asparagus. Two ingredients. Unending awesome.
So, the CrossFit Games Open is happening. I can’t say I’m doing great this year. I don’t have a lot of the skills I should have gained over the past year…and I could have a lot of excuses for that, but if anything, the Open so far has rekindled the fire I have to improve these skills.
Pull-ups, toes to bar are the two biggest weaknesses I have. Oh, and I want them. I want the power and pride to lift my own bodyweight up to the bar. I’ve been half-assedly working on it for a while, but now it’ll be a prime focus.
In other news, I’m pleased that the days are finally getting longer. And warmer. It’s supposed to get to the 30s and 40s this weekend and next week! That’s warm, especially when other parts of the country are colder than us.
And Daylight Savings is just around the corner, which means even more daylight. I’m excited! I don’t really see the point in Daylight Savings anyway, but at least it’s helpful this time of year.
Finally, I won’t be forced to wait for weekends to make and photograph recipes…I’ll be able to work on my hobby on the weeknights, too.
Less than three weeks until my vacation! It’s been a long, long time since I’ve had a vacation of much length, so I’m pretty thrilled about that. And with the weather warming up the way it has been, it will be a lovely spring trip.
Perhaps everything won’t be green…but that’s okay. I need the time off. There are big things in play on this trip, so it will no doubt be perfect regardless of how the scenery is. Maybe I’ll spill the deets right before or after my vacay. Stay tuned for that!
- ~1 lb asparagus
- ~12 slices bacon
- Preheat oven to 400 degrees. If necessary, trim the butt ends of the asparagus stalks.
- Wrap bacon around bundles of 3 or 4 asparagus stalks, spiraling up the bundles to cover as much of the asparagus as possible. How many stalks you have per bundle will depend on how thick the stalks are and your personal preference. The asparagus pictured were pretty thin, so I used 4 per bundle; in the summer, they tend to be thicker in my region, so I’ll only use 3 per bundle.
- Once wrapped, place on a parchment paper-lined baking sheet. Put in the oven and cook for 15-18 minutes or until bacon is cooked through and the tips of the asparagus stalks are crisped but not burned.
