Banana Bread Brownies

Ingredients

  • 3 bananas
  • 2 eggs
  • 10 dates
  • 1/4 c coconut oil, melted
  • 2 c almond flour
  • 1 Tb cinnamon
  • 1 tsp baking powder
  • 2 Tb cacao (double for all-chocolate brownies)
  • 1/8 c Enjoy Life chocolate chips (double for all-chocolate brownies)

Instructions

  1. Preheat oven to 375 degrees
  2. Prepare 9X9 baking pan (oil/line with parchment paper/whatever)
  3. Blend bananas, eggs, and dates in a blender
  4. In large bowl, combine dry ingredients – EXCEPT cacao and chocolate chips
  5. Add coconut oil and banana/egg/date mixture to dry ingredients and combine
  6. Pour half of mixture into baking pan
  7. Add cacao and chocolate chips to reserved half and mix, then pour into baking pan
  8. Bake for 30-40 minutes

Notes

I prefer to make these two-toned – only half is packed with chocolate. To me, that helps it taste more like banana bread rather than having the chocolate overpower that flavor. However, if you want to make these all chocolate (can’t blame you), simply double the amount of cacao and chocolate chips. Add cacao when stirring dry ingredients, and add the chocolate chips before pouring into the baking pan. Done deal.
