Concussions suck.  That is today’s theme.

But more on that in a minute, first, let me point out that you should suffer through my concussion story to get these nut-free, super easy, fantastic, awesome time banana waffles.  Because who the heck doesn’t like waffles?  Like, seriously?

Okay, back to the concussion thing.  Last week, while going for a new snatch PR, I bailed on the lift and the bar hit me on the way down.  I know, it’s a rookie mistake…who the heck doesn’t move their head when it’s in the way of 95# of weight that gravity is forcing to the ground?  I mean, it’s not gravity’s fault – gravity was doing its job.

Anyway, I actually didn’t think much of it when the bar hit me, and continued lifting.  I didn’t get my snatch PR, but I got dang close.  Two days later, I was complaining that I had been getting headaches and fatigue since that bar hit me, and someone finally insisted I go to the hospital.  Like any good girl, I referred to my nurse mom, and she, of course, freaked out and also insisted I visit the hospital because I could be dying.  Lovely words to get from your nurse mom.

Sure enough, I wasn’t dying, but I had a concussion, made no better by the fact that I had been going to CrossFit after getting said concussion.

And concussions SUCK.  Do you know what they tell you to do to get over your concussion?  Don’t do anything strenuous, don’t watch TV, read, play video games, look at screens…oh, we can sum this up by telling you to not do anything that causes you to “think”.  Seriously?  That’s not easy.  What am I supposed to do, lie around staring at the ceiling for hours on end?

The only good thing is I’ve had an excuse to sleep for 10+ hours a day.

At the very least, after taking the week off of CrossFit, I am absolutely ecstatic to go back.  Can’t push myself too hard the first few days, but I miss my CrossFit family!

Okay, okay, enough of me complaining.  On to waffles.

What I love about these is they are super easy to make (you can omit the cinnamon and make this a 5-ingredient recipe!) and they are flavorful enough that you don’t have to add any toppings or syrup if you would prefer not to.  Actually, every time I’ve made these I haven’t bothered with toppings.  I just walk around my apartment eating them like a boss as if they were an Epic Bar.  I have also been known to make a huge batch, telling myself that I’m saving them for the week, and eating like 15 waffles in a day.  There’s a reason I’m not super lean.

Banana Waffles (nut free)

  • Prep Time: 5 minutes
  • Cook Time: 10 minutes
  • Total Time: 15 minutes
  • Yield: 5 waffles 1x




  1. Heat up waffle iron
  2. Combine all ingredients in a medium-sized bowl. I suggest mashing the bananas and mixing by hand. I have blended everything together using my Nutribullet before, but I wasn’t as pleased with the results.
  3. Cook using waffle iron instructions (if you have a “crisp” option, I suggest using it for a delicate, crispy result)
