I’m going to be totally up front. I actually really hate the term “Chunky Monkey”. I don’t understand at all why the terms “chunky” and “monkey” apply to food…it doesn’t sound appealing at all. But, to be fair, it is an easily recognizable way to describe a food that has banana and peanut butter and possibly chocolate. And can you imagine how long the title of this post would be if I had to type all that out? So, this delicious breakfast/snack/treat is Chunky Monkey Chia Pudding.
I haven’t posted a recipe in a while, but hopefully my recipe-posting frequency will pick up a bit. I have so many recipe ideas, but sometimes I don’t have the ingredients on hand or simply don’t have the time to make a recipe and take relatively pretty photographs. I’ve been feeling rather…inspired?…of late, though, so more recipes should be coming your way. Yay!
When you’re on a Whole30 (like me), simple food is king. Especially when it’s something you can make in bulk and eat throughout the week (planning for the win!). So I love me some frittata! Here I am, finally joining in on the PUMPKIN ALL THE THINGS craze. Not that I haven’t made pumpkin the base of my food pyramid already—glance around my Facebook page or Instagram and you’ll see that pumpkin has become a huge part of my life. I might even say we’re going steady.
I’ve been having Bulletproof(R) Pumpkin Spice Lattes every. single. day. There’s nothing wrong with that. It’s actually the most fun and delicious part of my day. It’s a shame I have to rush through it 64% of my mornings to get to work on time. To make sure I have somewhat adequate time for my morning coffee ritual, it’s nice to have breakfasts pre-prepared.
That’s where chia puddings come in.
