Dry-Rubbed Crockpot Pulled Pork

I’ve been meaning to post a crockpot pulled pork recipe for a long time. I probably could have posted one waaaaaay back when I first started this blog…but the problem is, I tend to make up my dry-rub mix on the fly and never write it down.

Even when I did write it down, I didn’t know how to take a pretty picture of pulled pork. Not with my phone camera, anyway.

Well, things change. Now, I have a DSLR. And even though pulled pork wasn’t on my “recipe ideas” list…

I made pulled pork for a big housewarming taco party (along with 2 other kinds of meat), I wrote down the recipe as I made it, and I got rave reviews and compliments on the pork. My partner’s dad has asked me to make it again every time I’ve seen him since.

Okay, so this Tuscan Salmon with Coconut Basil Sauce was seriously fun to make. And fun to photograph with my new DSLR!

I’ve still got a lot of learning to do with this new piece of equipment, but some of the pictures turned out pretty dang well (although, let’s face it, I’m probably going to retake pictures once I get more practice). I haven’t had a ton of time to play around with my camera, but now that I’ve moved and I have more space for fun hobbies like this, the learning curve will be drastic.

Admittedly, I haven’t posted a recipe in a while. I hope this one makes up for it. I seriously miscalculated how much time and energy moving would suck out of me. We’ve been living at the new (totally awesome) apartment for a little over a week now, and the creativity and motivation is just starting to trickle in again.

Pork Tongue Tacos

Spicy Pork Tongue Tacos with Cilantro Avocado Creme

“Pork tongue” tacos may not sound all that appetizing to you. I get that. Kind of. Don’t be afraid, though. Shredded tongue is the BOMB. Trust me!

I made these tacos to fill a void in my life. You see, there’s this small taco and burrito shop called Romo’s in Fargo that my partner and I frequent. Now, having never been to Mexico or certain other southern states, I can’t really say I’ve ever had authentic Mexican…however, my partner claims that this taco shop has the best and most authentic Mexican meat in town. We actually prefer this place over Chipotle, which just opened in Fargo – it’s cheaper, we get more food, and it tastes phenomenal.

When we first went to Romo’s, I spotted beef tongue on the menu and knew I had to try it. I love being adventurous in regards to food. (If only I could apply that zeal to other parts of my life. Ah, well.)

So anyway, I tried the shredded beef tongue and absolutely fell in love. Salty, spicy, not dry at all…oh man, I still have dreams about this stuff. For a few weeks, we frequented Romo’s and I got the beef tongue every time.
