I’m not sure how my husband will feel about me sharing this shrimp, sausage, and caulirice skillet recipe.

You know how back in the day, families would keep their traditional recipes close to the chest, passing them down only to family members? If my man spouse had his way, I think this recipe would be that. This abashedly simple one skillet meal would become our staple. We’d make it regularly for ourselves and for dinner parties. Our astonished friends would gush over how delicious it is, not-so-hypothetically wondering how I made it. And Tjay and I would laugh and give each other a look and he would beguilingly say “it’s Chelsea’s signature recipe” or something equally dodgy.

For this meal, the chicken is seasoned simply with salt and pepper. I wanted to keep it very basic, because the star of the show is the apple-carrot mash! You’ll roast the chicken over the fruit and veggies, letting the drippings from the meat flavor what will become a rustic, slightly sweet mash to serve with the chicken.

As a kid, I hated salads. I heartily ate veggies like carrots, peas, and green beans…but if it involved lettuce, count me out. See, salads were iceberg lettuce + dressing, and they were just too boring and tasteless without drowning any iota of nutrition in processed dressing.

Now that I’m older, I know that a good salad involves more than lettuce. Toppings and add-ins elevate salads from boring to spectacular. Taking the time to make it pretty? Bonus points.
