Mache Salad with Beets, Pecans, and Goat Cheese

Mâche Salad with Beets, Pecans, and Goat Cheese

The mâche story

Much like my adventures with kohlrabi, mâche showed up in the early weeks of my CSA share.

It was right about the time I felt like I was going to be drowning in salads for the duration of the CSA…there was absolutely no light at the end of the tunnel – I was destined to eat just salad for weeks and the burden of that might just do me in. You see, there was just so much lettuce at first! As a meat and potatoes kind of girl, I didn’t think I would survive so many boring-ass salads.

Mâche saved my salad-heavy meal rut. Luckily, I also realized that salads could be a lot more creative than just lettuce and dressing. But seriously, mâche is awesome.

Let’s learn a little more about mâche, shall we?

Kohlrabi, Carrot, and Jalapeno Fritters

Kohlrabi, Carrot, and Jalapeño Fritters

Ever heard of kohlrabi?

It’s an annual vegetable that you may see at your local farmer’s market or receive in your CSA.

It looks weird. Really weird. Which is why I’d never tried it until I involuntarily received it in my weekly CSA share.

Kohlrabi is weird. But also awesome.

*Sigh* I knew this day was coming. Actually, that’s one of the reasons I signed up for a CSA – to try new things. And I have a food blog, so I must like experimenting in the kitchen to some extent. Prepared with a recipe idea and positive thinking, I ended up with these tasty Kohlrabi, Carrot, & Jalapeño Fritters. Success!

Buttery Balsamic Roasted Cabbage

Oh yeah, I’m back!

This week’s recipe is another incredibly simple recipe, but I couldn’t help but share it after making it multiple nights in a row. It’s safe to say that I enjoy recipes that are stupid easy. Too many people think that healthy eating (especially veggie the part of the equation) is boring, but experimenting with fats, sauces, and spices is what makes clean and healthy food uber awesome.

I find these kinds of kitchen experiments exciting. It’s why I enjoy cooking. I know not everyone will discover they like roasted cabbage like I do, and maybe the spices aren’t for everyone, but part of why I share these easy recipes is to show how simple good food can really be!

"Modded" Phat Fudge | DoYouEvenPaleo.net

Modded Phat Fudge

Ever heard the phrase “Fat is Phat”? That’s what this fudge is all about. Because fat is good for you. End of story!

Before we get to the recipe, I want to make it perfectly clear right off the bat: I am not the creator of Phat Fudge. Mary, The Paleo Chef, is the genius.

This is simply a modded (modified) recipe that I’ve found I really enjoy and want to share with you! I absolutely don’t want to try and take the credit for the original creation. In fact, I heartily encourage you to check out the original first. Because the original is always best, right? After that, come right back here and check out my version. Make both. Compare. Rejoice at all the delicious phat fudge on your hands.
