I’ve got to admit that I don’t often fuss around with ranch, because my man spouse completely despises ranch. I don’t have much of an affinity for it, so I just don’t bother. Better to avoid it than to have him constantly questioning whether I put ranch in a new meal—oh wait, he does that anyway.
Because of that, it had literally been years since I’d had ranch when Primal Kitchen released their paleo ranch dressing. Years!
But I was intrigued, so I tried a bottle of Primal Kitchen’s Ranch and I instantly remembered how dang delicious ranch dressing is. Pretty soon, I brainstormed a few recipes I could utilize it in.
Chicken bacon ranch something was the obvious choice, wasn’t it? Pair that with my desire to make more casserole-style, prep-in-advance dishes, and I found my recipe.
You’ve gotta love recipes you can prep in advance and enjoy all week. Life is so much simpler when you don’t have to cook every single night. That’s why I often roast a whole chicken on Sunday—we eat the thighs that night (our favorite part), and I use the remaining chicken for salads or recipes like this throughout the week. Then the carcass can be used for bone broth. Score!
Anyway, this chicken bacon ranch spaghetti squash casserole is a total win. You start off with a little prep—roasting the spaghetti squash, cooking the bacon. But once everything’s prepped, making the casserole is a breeze.
I chose to bulk up this casserole a bit with frozen spinach. It adds a little pop of color and nourishment without detracting from the flavor… Trust me, it’s all bacon and ranch in this casserole.
A quick note before we get to the recipe. I’ve only made this casserole with Primal Kitchen Ranch. I’m sure Tessemae’s would work just as well. I’ve never made it with homemade ranch… More power to you if you want to try it, but I can’t guess if a homemade ranch recipe will work with this casserole (it might not hold together, flavor might be different, etc.). So substitute at your own risk!
