For the past two weeks, I kicked off my morning with one of these Chocolate Coffee Banana Popsicles. Consider me a happy woman. Now the recipe lives here so you can start your day the right way, too!
The list of awesome things about these popsicles is pretty long. For starters, you only need 5 ingredients to make these. Oh, and they’re paleo, gluten free, vegan, and unsweetened. Cold brew coffee is a crucial component, which means they’re perfect for breakfast.
I don’t know about you, but my day is instantly better when I have a popsicle first thing in the morning!
Homemade popsicles are ubiquitous on food blogs these days. And I’ll readily admit that I rolled my eyes every time a new one popped up. Who wants to spend the money for popsicle molds just to have them sit around for 80% of the year? Anyway, most popsicle recipes are essentially a frozen smoothie. What gives?
Now I have to come clean. I was wrong. Homemade popsicles are the shit! Everyone should have their own popsicle molds. This recipe alone made the measly cost of the popsicle molds worthwhile.
After the first batch of these chocolate coffee banana popsicles, I fell in love. Now I throw together anything in or near my kitchen to see how it fares as a popsicle. I look at ingredients and wonder “will it popsicle?”
That’s not really an exaggeration—my man spouse even suggested we try to make popsicles for the cats by blending together tuna juice, a bit of their wet cat food, and fresh catnip. Um…work in progress.
Back to the popsicles for humans.
Coffee and chocolate are a great couple no matter what. The coconut milk prevents these pops from getting too icy when frozen. And hey, if I can get away with not adding sweetener, I will absolutely go for it. Yes, you’ll taste the banana. But personally, I like it. You probably will too!
I ordered these popsicle molds while working on my tutorial for making cold brew coffee. With an abundance of cold brew on my hands, popsicles like this were bound to happen. Actually, the idea of coffee popsicles drove me to buy the molds in the first place.
I mean, who doesn’t want to start the day with a chocolate coffee banana popsicle in the heat of summer?
Truthfully, you could enjoy one of these beauties anytime. But I’m the type of person who gets wired and struggles to sleep at night if I have coffee after 2 pm. And since cold brew coffee is one of the main ingredients, these are morning-only for me. You’ve been warned!

Chocolate Coffee Banana Popsicles
- Add all ingredients to a high-powered blender. Blend until smooth.
- Pour into six 2-ounce popsicle molds (my 2-ounce molds hold about 1/3 cup liquid each). Freeze for at least 4 hours.
- Run the molds under hot water for 10-30 seconds to release the popsicles from the molds. If desired, drizzle popsicles with melted chocolate before serving (it will harden from the frozen popsicles). Enjoy!
