I discovered two spectacular components of this Curried Delicata Squash only a few short months ago — curry powder and delicata squash. Weird, right?
I didn’t eat my first curry until I was 24 years old (in 2014), and I can easily say that I was missing out on something wonderful my entire life. I grew up loving squash, but my mom always bought acorn or buttercup squash for us to share, and smaller squash varieties like delicata or sweet dumpling were “gourds” that were bought for decoration. I honestly shudder to think of all the delicious and versatile squash that’s bought to rot each year because people think it looks pretty but don’t know how to prepare it!
Hopefully, this recipe will get someone out there to try eating delicata squash instead of discarding it as a kitchen decoration.
I’ve been experiencing some troubles in the gym lately. Well, that’s not entirely true. I haven’t even been in the gym lately. Not only did things get busy with the holidays, a medical flare-up has stopped me in my tracks. Nothing like the fear of another surgery to stop you from getting your squats on.
You’d think staying away from the gym would mean more time in the kitchen. That’s true. I spent a lot of time baking and creating holiday treats…for like, two days. Other than that, I’ve been feeling uninspired and generally tired out, so there’s been a lot of eating out or basic, thrown-together-last-minute meals going on. I’m definitely not ending the year with a bang. Sad day. Although I do have a few recipes in my arsenal to share with you, I probably won’t be increasing the amount I post until I feel some sort of wave of recipe/blog inspiration.
Random musing: I feel like as the seasons changed, I became a night owl. I typically tell people I’m a morning person because I love waking up as the sun comes up, while the mornings are still cool and chirping birds greet the day. But I’m beginning to realize that as the days got shorter and the mornings darker, I started resisting my morning alarm and I positively drag in the morning. This isn’t the first year it’s been like this in the winter. My first thought when I wake up is yearning for when I can go to back to bed in the evening. I’m generally tired throughout the day. But when evening comes, I’m suddenly more awake than I’ve felt all day. I sometimes struggle to go to sleep before midnight even though I’ve been lying in bed for hours. It’s weird to me because I haven’t made any noticeable changes to my diet or lifestyle…but it’s worth keeping in mind to see what happens as the seasons change in 2015, that’s for sure!

- It’s spectacularly tasty.
