Well, hello there, breakfast.

I daresay, you haven’t looked this sexy in a while.

Could it be the rich, dark chocolate color?

Or…what is that you’re hiding inside? Bacon? Candied bacon?

Oh yes, breakfast certainly just got a lot sexier because of these paleo dark chocolate bacon waffles.

Dark Chocolate Bacon Waffles

I really love waffles. Which is why I created these chocolate bacon waffles. For the longest time I thought I was a pancake person, but after finding Waffles I knew there would be a special place in my heart for this particular breakfast food.

Waffles the Paleo Cat

That’s right…his name is Waffles. I found a stray and named him after a cat in the old Nickelodeon show Catscratch. He burrowed his way into my heart faster than I could get him to an animal shelter, so he quickly became part of the family. Isn’t he adorable? And I knew from that moment on that my relationship with waffles had changed. As I said, I used to side with pancakes in the “pancakes vs. waffles” debate, and I had actually never owned a waffle maker, so it’s pretty strange that I didn’t name this little kitty “Pancakes”. But, when I finally got my hands on a waffle maker and made my first paleo waffles, I was hooked. Waffles totally beat out pancakes in my kitchen any day now!

The inspiration for these decadent paleo waffles came when I saw a very not paleo recipe of the same name. I didn’t even bother looking at the ingredient list…I knew from the recipe title that I wanted to recreate them my way. I had been wanting to make candied bacon anyway, so why not mix them in some chocolate waffle batter and call it good?  I mean, that actually sounds like a better use of candied bacon anyway.

These waffles are not super sweet on their own, so you’ll definitely want to top them with maple syrup, honey, or a fruit compote. They are certainly dark chocolate waffles. But, with the candied bacon and pure maple syrup, they were rich and just sweet enough.

Paleo Dark Chocolate Bacon Waffles

Dark Chocolate Bacon Waffles

  • Prep Time: 10 minutes
  • Cook Time: 30 minutes
  • Total Time: 40 minutes
  • Yield: 5-6 Waffles 1x



Candied Bacon:

  • 6 slices bacon
  • 1/4 c honey


  • ½ c cacao powder
  • ¾ c almond flour
  • ¼ c tapioca flour
  • 2 tsp baking powder
  • ½ c nut milk or coconut milk
  • 2 Tb coconut oil, melted
  • 2 Tb honey
  • 2 eggs
  • Candied Bacon, chopped (from above)


For the Candied Bacon:

  1. Preheat oven to 325
  2. Brush bacon with honey
  3. Bake for 20 minutes, then let cool

For the Waffles:

  1. Preheat waffle iron
  2. Mix all ingredients, save Candied Bacon, in a large bowl
  3. Stir in chopped Candied Bacon
  4. Cook according to waffle iron specifications

    1. You could certainly try it! I haven’t done it myself, so I don’t know how easy they would be to flip. I would just suggest using a lot of ghee or coconut oil to make sure they don’t stick and making them fairly small for easy flipping (just in case they have trouble staying together)

It makes me want to cry that I do not have a waffle iron to make these tantalizing sexy things, #firstworldproblems Ok and its so weird that you have a recipe for strawberry lemonade bars, seriously I saw a non paleo version and vowed to make them paleo, some kindred spirit stuff going on there!! Ps. how did you get that email check box at the bottom and the rss thing, I am such a noob…

    1. You could try them as pancakes, but I’m not sure how they’d turn out! Maybe I’ll have to work on a pancake version…
