How to Make Great Bunless Burgers
I’ll be the first to admit it. Burgers have long been a cooking struggle of mine.
Overcooked. Undercooked. Too thick. Falling apart.
As far as I’m concerned, everyone has an Achilles heel or two in cooking. Burgers were one of mine.
But with practice, patience, and a step back into extreme simplicity, I think I’ve finally got it down.
After all my attempts at burgers, my man spouse is understandably skeptical whenever I say burgers are on the menu. But when testing this recipe, he asked, “What did you do? Those burgers were great!”
Anything that gets a thumbs up from him is a must-blog recipe.
So. How do you make great burgers? Simplify.
Salt and pepper spice up these burgers. That’s it. Mix them in, with your hands, but don’t work the meat too much or your burgers will be tough.
Make thin patties. Thinner. A lot thinner than you think.
As they cook, burgers shrink and plump up. So it’s better for your patties to be more disc-like than hockey puck-like.
Trust me on this, because too-thick patties is the main reason my burgers always used to fail.
How to Make Lettuce-Wrapped Burgers
Lettuce-wrapping is a skill.
Seriously. It’s not as easy and effortless as most people on Instagram make it look.
I just jumped on the lettuce wrap bandwagon (I know, I’m terribly late), and learning how to wrap these things is surprisingly challenging. Maybe my struggle relates to me being clumsy AF. Who knows.
I have a couple tips as I get used to this lettuce wrap life.
Use parchment paper or wax paper as your guide. Trust me, it’s so much easier than trying to wrap that lettuce alone.
That said, don’t just wrap the parchment paper up in the lettuce wrap pinwheel-style. Then you’ll just be eating paper with your burger. NO FUN.
Instead, you use the parchment paper to help form the lettuce wrap, but pull the parchment paper back to prevent it from getting caught up in your bundle of food.
In all honesty, I’m still getting the hang of it. But down the road, maybe I’ll record my first ever video to give you a tutorial on how it’s done.
For now, just know that with every lettuce wrap you make, it gets easier!

These paleo and Whole30 bunless burgers are as simple as it gets – kicked up with an easy cilantro dill mayo sauce!
For the Cilantro Dill Mayo
- 1/4 cup junk-free mayonnaise
- 1/2 tablespoon to 1 tablespoon water
- 1 tablespoons finely chopped fresh dill
- 1 tablespoon finely chopped fresh cilantro
For the Burgers
- 1 pound ground beef
- 1/2 teaspoon sea salt
- 1/4 teaspoon freshly ground black pepper
- Beefsteak tomato, sliced
- Red onion, sliced
- Pickles, sliced
- Green lettuce for lettuce wraps
- Add the mayonaisse, 1/2 tablespoon of water, dill, and cilantro to a small bowl and stir. If the mixture is still too thick for your liking, add an additional 1/2 tablespoon water. Cover and refrigerate until ready to serve to allow the flavors to meld.
- Turn on a gas grill, oil the grates, and heat it to medium-high (about 500 degrees F). Using your hands, combine ground beef, sea salt, and ground black pepper to a bowl. Be careful not to overmix! Form the beef into 4 thin patties.
- Grill the burger patties for 2 1/2 minutes on each side, flipping only once. Rest the patties on a plate for a couple minutes before crafting the burgers.
- To wrap the burgers, lay out a strip of parchment paper. Place 3-4 pieces of green lettuce on the parchment paper, overlapping a bit. Position the burger patty near one edge. Add tomato slices, red onion, pickled, and cilantro dill mayo sauce. Starting on one end, wrap the lettuce around the burger, using the parchment paper as a guide to help. Wrap the lettuce as tightly as possible, pulling back the parchment paper so it doesn’t get caught up in your burger! Fold the back of the parchment paper to contain the burger. Eat immediately.
