Fajitas don’t need a lengthy marinade to sport top-notch flavor. In my version, the skirt steak gets a quick rub-down with a simple spice paste. Then the skillet makes quick work of the rest of the meal!

When I made this meal for my partner, he practically lost his mind. (I even made extra when preparing to photograph the recipe so he didn’t have to wait to eat.)
Somehow, with my spouse, the most simplistic meals are by far his favorite. Simple cooking usually draws in the cook for obvious reasons — less active time in the kitchen, quick meals after getting home from work, a less robust grocery haul.
But my spouse loves those simple, meat-and-potatoes meals despite the fact that he never has to make them himself.
And I think I’ve got to lean into this thinking a little more. I’m all about simplifying life, and I’ve often repeated the phrase that Steph Gadreau used to pepper throughout her Instagram captions: Keep It Stupid Simple. (Or Keep It Simple, Stupid. I guess it could go either way!)

Once a hot cast iron skillet has made quick work of the fajitas, you can enjoy the meal as-is or jazz it up with a few different serving options.
First, let’s talk garnishes/toppings. I’ve never been shy about my love of toppings! And some of my favorite taco toppings are more than welcome here, too:
- Sliced avocado
- Pickled radishes/red onions/jalapenos
- Tomato wedges (This is a traditional fajita thing, as far as I can tell. I find it kind of annoying. But they do look pretty when serving.)
- Lime wedges, for spritzing
Beyond that, you noticed I mentioned tacos — which are, of course, an option here too! If you want to put in a little extra work, you can make some Whole30-friendly plantain tortillas for these fajitas.
Or, go the bowl route and serve the fajitas and all the fixin’s in a bowl with cauliflower rice.

Quick and easy Whole30 Skillet Steak Fajitas can be on the table in under 30 minutes! With just a few simple ingredients, this recipe is sure to become a weeknight favorite.
- 2 tablespoons extra virgin olive oil, divided
- 1/2 teaspoon chili powder
- 1/2 teaspoon chipotle powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika (see notes)
- 1 teaspoon coarse sea salt
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon ground cumin
- 1 pound skirt steak
- 1 green bell pepper
- 1 yellow bell pepper
- 1 red bell pepper
- 1 large yellow onion
- 1/4 cup packed cilantro, chopped
- 1 large tomato, cut into wedges, for garnish
- 1 avocado, sliced, for garnish
- lime wedges, for spritzing
- Combine 2 teaspoons olive oil, chili powder, chipotle powder, cumin, garlic powder, smoked paprika, sea salt, and black pepper in a bowl, mixing until a paste forms. Rub the skirt steak on both sides with the spice paste.
- Preheat a large cast iron skillet over medium-high heat. Add seasoned steak and sear for 4-5 minutes on each side. Transfer to a cutting board and tent with foil while the steak rests.
- Meanwhile, scrape up any browned bits from the cast iron and add the remaining olive oil. Add the bell peppers and onion to the skillet, stirring regularly for about 5 minutes until the vegetables are seared and softened. Stir in the chopped cilantro.
- Turn off the heat. Slice the skirt steak thinly across the grain and place on a large serving plate. Top with the cooked vegetables, avocado slices, and chopped tomato. Garnish with lime wedges, if desired. Serve with gluten free or paleo tortillas, if desired.
If you don’t have smoked paprika on hand, feel free to substitute with regular paprika.
