I’m so excited about this post you guys!
First off, I made this really awesome recipe, Eggroll in a Bowl. It’s all the goodness of an eggroll without dealing with the wrapper. Instead, it’s the delicious pork-and-veggie filling, seasoned to flavor perfection.
And secondly, the recipe is actually a guest post over at The Freckled Foodie.
Finally, I want to talk a bit about local and online communities!

I was very pleased to share a recipe on The Freckled Foodie‘s blog. Not only have I been following her for awhile, using her blog as inspiration for starting up my own, but I actually got to meet Rachael, the girl behind the blog. See, she is a Twin Cities blogger, who occasionally comes to Fargo for work. The last time she knew she was coming to Fargo, she let me know and we met up for a gluten free dinner at a local German bar.
She’s so sweet and down to earth! It was such a pleasure meeting someone with similar ideas and interests! Sure, I have my CrossFit friends, but I have yet to meet someone in Fargo who truly embraces Paleo (some CrossFitters I know kind of eat paleo sometimes sort of when they feel like it because it’s sort of a CrossFit thing but hey look at that pasta omnomnom – that is to say, paleo is a CrossFit fad to them, not a lifestyle). It’s so refreshing to be able to talk about similar interests in person! The online paleo community is incredibly awesome and supportive and I love being part of it, but it just doesn’t compare to meeting someone in person and talking about these things.
That said…if you are in Fargo or the surrounding area and want to meet up, please let me know!
Okay, a little bit about this recipe! I wanted to create something awesome for my guest post that was Whole30 and 21DSD friendly. I’m happy to say that this is both. As I was brainstorming recipe ideas, I got fixated on Chinese flavors – coconut aminos, fish sauce, sesame. So that’s what I came up with! Eggroll in a bowl also has a bunch of veggies, so this recipe basically makes a meal! You could easily serve it over some cauli-rice, though!
Using half a head of cabbage, 3 carrots, and a pound of ground pork, this makes a lot of food. And in case you didn’t know, I mostly just cook for myself. I was pleased to find that this recipe reheats well – awesome work lunches for the win!
