Hearty Beef Stew

I like smiling.  Smiling is great.

Life has been great.  I’m still unsatisfied with my job and looking for something new, but there’s not much I can complain about (except for the ever-growing stack of dishes in my sink).  It’s just great when you can take a look at your life and really feel like you’re on the right path.  I can look at myself in the mirror and smile, and not feel like I’m forcing a smile.  I certainly don’t have everything figured out yet.  But dang, what I do have is pretty good.

Okay, enough of that.  On to the recipe!

Paleo Crockpot Beef Stew

So, this is obviously more of a winter recipe.  Not many people greet summer with a freaking awesome stew.  But, in my defense, the boyfriend likes soups and stews, and I had a giant chuck roast I didn’t know what to do with, so the obvious answer is to throw it in a crockpot with a ton of veggies, bone broth, and spices.

You know how they say the quickest way to a man’s heart is through his stomach?

I haven’t got a clue if it worked on him, but I definitely love myself a lot more.  And I’m not even a man.  I just like good food.

So here you go.  An awesome beef stew recipe.  And it makes a LOT – depending on how much you eat and how many people you’re feeding, this will last you, like, a week.  But trust me, you’ll still like it at the end of that week.

Hearty Beef Stew


Scale

Ingredients

  • 23 lb chuck roast
  • 45 carrots, sliced
  • 34 turnips, sliced
  • 34 parsnips, sliced
  • 12 cups bone broth
  • 1/4 large onion, sliced
  • 1 cup water
  • 1 T basil
  • 2 tsp sage
  • 1 T garlic powder
  • Other spices, to taste (I used a good deal of Flavor God)

Instructions

  1. Place all ingredients in a crockpot
  2. Cook on high for 3-4 hours or low for 5-7 hours, until veggies are soft and meat falls off the bone and breaks apart easily
  3. Add more seasoning to taste, serve, eat!
