Summer is coming, and my head has been filled with daydreams of luscious strawberries, sweet watermelon, and tart berries. This fruit salad recipe may not have all of those things…
But holy balls. This fruit salad.
I guess if you wanted to, you could probably add raspberries or blueberries or whatever. I don’t think it’s necessary, but hey, whoever said you have to follow a recipe?
The night before I made this, I had been daydreaming about the wonderful mixture of nutty and sweet. I knew I could make an awesome dressing for a fruit salad with nut oil, and I immediately thought of macadamia oil. It has the perfect flavor!
So you can imagine how quickly my mood skyrocketed when I taste-tested the idea by drizzling some mac oil on a chunk of watermelon. Oh. My. Glob.
The addition of mint just throws this over the top.
Of course, the awesome part of this recipe is that it’s so easily customizable. You can add less mint, more mint. Don’t have strawberries? Leave them out or sub in a different berry. Or use different fruit entirely. It will probably still taste delicious, because what fruit isn’t delicious when mixed with mint and creamy, delicious fat?
The only caution I will give you about this recipe is: if you add the dressing too early, it will soak in/sink to the bottom of the bowl and you won’t get the wonderful macadamia flavor that makes this dish rock super hard. So only add the liquid when you’re ready to serve and eat!
That being said, it’s still delicious and awesome after the mac oil has soaked in. It’s just a preference thing! And you can always refresh it with more oil, although your fruit might start to get soggy and weird.
- 3 c watermelon
- 2 c strawberries
- 7–8 mint leaves, chopped
- 1 Tb lemon juice
- 2 Tb macadamia oil
- a pinch of salt, optional
- Stir together watermelon, strawberries, and mint
- Combine lemon juice and macadamia oil
- (Optional) sprinkle some salt on the fruit before adding dressing
- Just prior to serving, add lemon juice/mac oil mixture and stir to coat
