Next Level Chicken Wings |

Next Level Chicken Wings

My Next Level Chicken Wings are just that…next level. Flavor beyond this mortal plane.

These wings have become a favorite of my fiancé’s. If I send him a text letting him know that next level chicken wings are on the menu for dinner, he texts back that I’ve just made his day and he couldn’t be any happier.

As a matter of fact, he’s the one that named this recipe. The first time I made them, he kept pausing between each wing to sing the praises of how incredible they were. “I just…wow. They’re next level. Next level wings.”

I told him I thought that was a pretty solid name for a recipe, and bestowed him with the power to name all the different chicken wing recipes I come up with. So things might get a little weird around here, but bear with me.

My Non-Traditional Wedding

How A Burst Appendix Led to A Wedding in A Pizzeria

“We’ll just have to wait for 2017.”

I tried to say these words facetiously. Since rushing to the hospital, this was our first moment alone together. Him in a hospital gown, strung up with medical equipment, awaiting an unplanned surgery for a ruptured appendix. Me sitting at his side, leaving work and dropping all other plans to be with him.

I couldn’t have said anything worse. His face clouded and he shuttered his thoughts.

I’d been talking about marriage.

Warm Winter Kale & Delicata Squash Salad

Warm Winter Kale and Delicata Squash Salad with Maple Vinaigrette

I know what you’re probably thinking. “Warm winter kale and delicata squash salad? Really?” I know. It sounds like I just ran out of ideas and threw some foodstuffs together hoping no one would notice how weird they are.

That’s not that case. This is a damn good salad. After spotting the idea for a warm kale salad online, I decided to utilize the ingredients I had on hand to make a salad I could bring to Thanksgiving dinner.

Surprisingly, I didn’t get thrown out for bringing a salad to Thanksgiving. More surprisingly, people ate my salad and legitimately liked it. So much so that they went back for seconds.

At that point, I knew I had to recreate the recipe and share it here.

Sautéed Cabbage with Leeks |

Sautéed Cabbage with Leeks & Seeds

Creating (and loving) this recipe for sautéed cabbage with leeks & seeds helped me realize that I really need more veggies in my life.

I’m sure a lot of us could say that with 100% conviction. I mean, let’s face it, is there a downside to eating more vegetables? No. No, there’s not. Who’s going to enjoy a bite of expertly-prepared veggies and say “this tastes amazing, but I really don’t need more essential vitamins and minerals in my life. Pass.”

No one, that’s who.

Top 3 Paleo Protein Bars |

My Top 3 Paleo Protein Bars

It’s high time I share some of my favorite things with you, starting with my 3 favorite paleo protein bars!

I don’t cook all the time. *gasp*

I know. What a confession, right? There are numerous times throughout the week that I’m busier than I thought I would be and just don’t have any food prepared. Or, equally likely, nothing in the fridge looks good but I still want to grab a bite before or after CrossFit.

So I take a look into my little snack basket (a wicker basket in my pantry where I throw all the grab-and-go stuff) and *Da-na-na-NAAA* snatch up a paleo protein bar. Yum!

We’re pretty fortunate to be surrounded by small businesses that embrace the real food movement and appreciate the paleo template. There are a myriad of options for go-to paleo snacking and protein bars, and after trying a good chunk of them I’ve found my favorites. I truly enjoy trying new food and products whenever I can get my hands on them, but these 3 bars are the ones I know I can always fall back on.
