I’ve got to apologize in advance that I don’t have more to say today. I’m writing this post quickly before leaving on my vacation and scheduling it for later. Hopefully you understand why I’m in a rush!

I created this recipe a looong time ago while experimenting with leftovers and egg bakes. Like many of my early creations, I didn’t write down the recipe and therefore completely forgot I had made such a thing (even if it was totally delicious). That is, until someone going through my old Instagram photos (from over a year ago) asked for the recipe and I realized I didn’t have it.

Spicy Pork Tongue Tacos with Cilantro Avocado Creme

“Pork tongue” tacos may not sound all that appetizing to you. I get that. Kind of. Don’t be afraid, though. Shredded tongue is the BOMB. Trust me!

I made these tacos to fill a void in my life. You see, there’s this small taco and burrito shop called Romo’s in Fargo that my partner and I frequent. Now, having never been to Mexico or certain other southern states, I can’t really say I’ve ever had authentic Mexican…however, my partner claims that this taco shop has the best and most authentic Mexican meat in town. We actually prefer this place over Chipotle, which just opened in Fargo – it’s cheaper, we get more food, and it tastes phenomenal.

When we first went to Romo’s, I spotted beef tongue on the menu and knew I had to try it. I love being adventurous in regards to food. (If only I could apply that zeal to other parts of my life. Ah, well.)

So anyway, I tried the shredded beef tongue and absolutely fell in love. Salty, spicy, not dry at all…oh man, I still have dreams about this stuff. For a few weeks, we frequented Romo’s and I got the beef tongue every time.

I love how versatile food can be. Seriously, real food can be so, so simple, but it can also be used for a never-ending variety of meals. I’ve recently discovered how versatile spaghetti squash can be. Case in point: Spaghetti Squash Chow Mein.

This recipe makes a lot of food, which is always awesome because then you get to use the leftovers. And let me tell ya, the leftovers are almost better than the original recipe. Don’t you just love when food tastes better the second time around?! Obviously, this would pair extremely well with my Eggroll in a Bowl, and that makes an equally epic amount of food.

Chipotle Chorizo Burgers with Maple Balsamic Sauce

Okay, everyone, you asked for it and you’ll get it. But before we get to the Chipotle Chorizo Burgers, I’ve got something else I want to chat about.

I’ve been giddy over the number of people who have signed up for my newsletter, Paleo Bytes. If you don’t know the story, here’s the quick rundown:  I gave my readers the option of signing up for email subscriptions, but I wasn’t planning on sending one out. I told myself that if I gained a certain number of subscribers, I would commit to sending out a newsletter.

A few months later, I checked my numbers, and what do you know – my “goal” (that I wasn’t actively shooting for) was exceeded by 33%. Hot damn! Obviously I needed to think up a newsletter! See, I don’t want to just bombard your email every time I post a new recipe. I never read those emails; they just get deleted. So, for my newsletter I wanted to send out fresh content that won’t be posted here, on the blog. To me, there’s got to be an incentive for opening up that email and reading it.

Well, apparently people like that idea. I’ve only sent out one newsletter…but my second will have 68% more readers!
