I made this shrimp for my first grill-out of the summer.  How weird is it that it’s almost mid-July and I’ve only grilled once?  Well, I don’t have my own grill and I’ve been working an overnight shift, so it’s kind of hard to find people to grill with.  But I finally managed it, and I made some bomb spicy shrimp.  I’m just glad I wrote down this impromptu recipe so I could share it!

Paleo Blueberry Protein Muffins

This blueberry muffin recipe turned out awesome on my first try. As a result, I now feel like a Paleo baking goddess. So of course I had to share, so you can feel that way too!

I’ll admit, this recipe is a little more primal than paleo due to the protein powder. I use high quality, crap-free protein powder (SFH – Stronger Faster Healthier) that is made from grass fed whey as an occasional supplement for CrossFit. Whey is technically derived from dairy, so it’s not strict paleo. However, it doesn’t bother my stomach and it’s fantastic, quick fuel for my workouts. If you aren’t using protein powder, just add a couple more tablespoons of coconut flour or tapioca flour and you should be good.  (As a note, I’ve never tried them that way before, so I don’t know if it works).

Hearty Beef Stew

I like smiling.  Smiling is great.

Life has been great.  I’m still unsatisfied with my job and looking for something new, but there’s not much I can complain about (except for the ever-growing stack of dishes in my sink).  It’s just great when you can take a look at your life and really feel like you’re on the right path.  I can look at myself in the mirror and smile, and not feel like I’m forcing a smile.  I certainly don’t have everything figured out yet.  But dang, what I do have is pretty good.
