Whole30 Herbed Chopped Salad

With fresh herbs and simple fresh veggies, this Herbed Chopped Salad is all about variety and flavor.

A good chopped salad will convert even the most stalwart of salad-haters. Because you can’t really argue with all the awesome variety that a chopped salad provides.

With cucumber, two types of tomatoes, basil, dill, parsley, and more, this Whole30 and keto chopped salad folds in a helluva lot of flavor.

I fully realize this makes me sound crazy and will likely induce more than a few eyerolls, but I’ve grown to appreciate nutritious, colorful meals that feature a TON of veggies.

And since this salad 100% fills the bill, I knew this would be a salad worth sharing with you.

How to make a good chopped salad

Good salads don’t have to be hard or unattainable! The defining feature of a chopped salad is that all the toppings and various mix-ins are chopped up into uniform bite-sized pieces so you get all the flavors and textures in each bite.

Oh, and they’re often arranged prettily across a bed of greens, making them eye candy to boot.

Other than that, chopped salads (in my opinion) should be just like any other awesome leafy green-based salad: a variety of toppings and mix-ins for varying flavors and textures, along with a classic dressing to tie it all together.

All that said, my best advice for making an awesome chopped salad is to put the care in to make your toppings somewhat uniform.

Clearly, I misstepped my own advice for the sake of the photos (I could have/should have diced the cukes instead of slicing them), but as long as you can pile a multitude of toppings onto every bite, you’re a chopped salad winner.

Mix and match for better salads

Typically, I think changing a salad pretty much changes the whole recipe, since swapping out even one ingredient can overhaul the whole thing.

BUT, don’t let that stop you from changing this recipe to suit your tastes.

Here are a few ways you can put a new spin on this herbed chopped salad:

  • Add protein in the form of shredded baked salmon or diced chicken breast
  • Swap out fresh basil for fresh oregano
  • Add feta cheese if you like dairy on your salads
  • Leave out the romaine and use a little less dressing

Ingredients

  • 1 head romaine lettuce, chopped
  • 1 pint grape tomatoes, halved
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup diced red onion
  • 1 large cucumber, cubed
  • 1/3 cup chopped fresh basil
  • 1/3 cup chopped fresh dill
  • 1/3 cup chopped fresh parsley
  • Feta cheese (optional)
  • 2 cloves garlic, minced
  • 1/4 cup lemon juice
  • 3 tablespoons apple cider vinegar
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon fresh black pepper
  • 1/3 cup extra virgin olive oil

Instructions

  1. Divide romaine between 4 bowls. Arrange grape tomatoes, sun-dried tomatoes, red onion, cucumbers, dill, basil, parsley, and feta cheese in even rows across each bowl.
  2. In a jar or medium-sized bowl, combine minced garlic, lemon juice, apple cider vinegar, sea salt, and black pepper. While whisking, slowly drizzle in the olive oil. Continue to whisk until the dressing is emulsified. Pour the dressing over each salad and serve, being sure to toss before eating.
